Meal Plan Report - Week 1: How'd we do?

Monday:  Polenta tamale pie (adapted to be vegetarian) - always a favorite. Crushed tortilla chips on top. 

Tuesday (Leftovers)

Wednesday: Spinach tortellini soup: - A little too heavy on the tomato for me; I'll probably use straight broth next time. I think I must have doubled the fresh spinach.

Thursday: Enchiladas - (omitting condensed mushroom soup) *new recipe*: Well, I didn't exactly follow the recipe, but it was ok. FitDad liked it, and it made a whole bunch, enough for lots of leftovers. Pretty much just a casserole, but what do you expect from a Crockpot? I think it'd taste better with sliced olives and corn; my sister suggested cream of corn soup instead of cream of mushroom soup.

Friday: Taco salad - Perfect for my busy Friday. Came home and assembled a salad that could in no way be considered "taco salad" but was delicious nonetheless (romaine chopped, grated goat milk gouda, sliced black olives, avocado, tomatoes and Trader Joe's Goddess Dressing)

Saturday (Eat out!)

Sunday: Eggs and waffles - Edited to add: Over-medium eggs, topped with fresh Parmesan cheese and sauteed Swiss chard from the garden. Maybe waffles for dessert? 

The verdict: We stuck to the plan, which is more success than I anticipated. We both really liked the recipes we'd had before, but not the new one. Feel free to comment with your recipe suggestions here. (Hint, hint.) On Monday I'll post next week's plan. Thanks!
